Energy Balls

These are great healthy snacks wether you are on the go or just need a quick fix. They are full of goodness and taste great.

Lemon Coconut 

  • 1 cup old fashioned rolled oats
  • 1/2 cup unsweetened finely shredded coconut
  • 2 tbsp chia seeds
  • 2 tbsp hemp hearts
  • 2 tbsp flax seeds
  • zest from lemon
  • 2 tbsp fresh lemon juice
  • 1/2 tsp fresh ginger
  • 3/4 tsp pure vanilla extract.
  • 1/4 tsp coconut extract
  • optional : 1/4 cup crushed almonds
  • 1/2 cup for rolling

Peanut Butter & Chocolate 

  • 1 cup old fashioned rolled oats
  • 1 cup pitted dates
  • 1/2 cup unsweetened finely shredded coconut
  • 2 tbsp chia seeds
  • 1/4 cup hemp hearts
  • 2 tbsp flax seeds
  • 2 tbsp coconut oil
  • 1/2 cup natural peanut butter
  • 1/4 cup crushed almonds
  • 1/4 tsp almond extract
  • 1/2 cup dark chocolate chips (stir this ingredient in at the end)

Instructions

Put all ingredients into a food processor and blend until it starts to form a dough like consistency. It will start to form a ball in the processor. Transfer into a bowl.

Peanut Butter Chocolate Chip Balls – Stir in chocolate chips after it’s blended and roll into balls and refrigerate.

Lemon Coconut Balls – Roll into balls and then roll into shredded coconut. Refrigerate.
