Eggs, Tomatoes & Spinach

This is one of my favourite breakfast eats. It’s healthy, nutritious and delicious!


Serves 2-4


  • 2-4 tomatoes quartered
  • 4 handfuls of spinach
  • 2-4 eggs
  • minced garlic
  • salt & pepper to taste
  • 1 tbsp coconut oil or olive oil

Add coconut oil to pan and add garlic and tomatoes. Cook until tomatoes are tender. Add handfuls of the spinach and toss till spinach softens.  Crack eggs onto the mixture and cook on low until the eggs cook to desired readiness. Tastes great scrambled too! Add salt & pepper.
